Well, I have been Mia for a while because a bout of pneumonia had me under the weather. Well, more than under the weather, pretty much all I could muster for a while was throwing some meat and veggies together for a soup. And thats also all I wanted/could eat. With all the down time, I got to thinking, what really is the best way to get better when you are sick? You ask ten people, and you will get ten different answers as to what works for them. From just popping some pills, to eating comfort foods, to hot baths…
Over the years, in dealing with my asthma and thus frequent infections, I have found that my body takes up so much energy just to heal, that it needs even more nutrients and food then when I am functioning normally. Problem is, I don’t feel like eating when I am sick. So for me, these nutrient dense soups are a win-win.
By boiling bones with some vinegar for a long period of time, the the collagen that is in the bone marrow leaches out, thus creating a drinkable multivitamin. Collagen is good for everything from healing the gut, to strengthening the hair, nails and skin, to supporting joints to assisting the body to flush toxins out. Pretty powerful stuff if you ask me! I simply throw a pre roasted chicken carcass in the crockpot overnight with a tbsp of apple cider vinegar and cover it with water. In the morning I strain the broth, put back in the crockpot with the chicken, veggies, and salt/spices and let it simmer away again. Mmm mmm good.
