My shipment of collagen finally came in from vitacost (I may have ordered a lot). So I do what I do best and got to creating in the kitchen. Since it is summer, there has been a lot of smoothies going around here (more on that later). But these bad boys hit the spot I tell you. Now, I have also been going low to no sugar as well, so I do not include any added sugar in this recipe. Except of the dark chocolate chips of course.
I have included two ways to make these, one no sugar made with pumpkin, and the other contains a little natural sugar from the bananas. These perfect little treats are a nice way to get a little more protein, and a little more satisfaction in from your mid day (or whatever time of day) snack.
Now, I have a little tip for you. If you don’t have any ripe bananas (you know the soft kind with black spots that are perfect for baking), take your yellow ones and chunk into bowl of kitchen aid. Sprinkle your sea salt over top and turn kitchenaid onto low. Leave mixing for at least a full minute and watch the magic. Slowly the bananas “ripens” and softens and turns into a mushy mixture perfect for baking.
Notes: this recipe includes an autoimmune paleo reintroduction of cocoa in the form of Enjoy Life dark chocolate chips. They are 60% cocoa and contain less sugar than the regular kind. Also, I bake my cookies in silicone cups. I find this keeps them round and soft. You are welcome to bake yours on parchment paper; I just have not tried this out yet. You can substitute carob chips, coconut flakes or raisins for the chocolate chips if you are still in phase 1 of the protocol.
- 2 bananas or ½ c canned pumpkin
- ½ c melted coconut oil
- ½ c softened coconut butter
- 3 tbsp tiger nut flour
- 3 tbsp coconut flour
- ⅓ c collagen
- 1 tbsp gelatin
- ¼ tsp cream of tarter
- ½ tsp baking soda
- 1 tsp cinnamon
- dash sea salt
- ½ c dark Enjoy Life chocolate chips
- Preheat oven to 350 deg oven
- in bowl of kitchenaid, place either bananas or pumpkin
- Add coconut oil and butter and cream
- Add the rest of the ingredient in order given
- mix well
- If able, add chocolate chips
- Scoop by 2 tbsp full onto cookie sheet
- Bake for 20 minutes
