When I first started the autoimmune paleo protocol, I was very resistant to the change. If I am being honest, it was mostly around having to give up eggs. (tear) I still miss them, but once I decided to embrace the change, I found a new freedom in experimenting with cooking and baking. I decided to work with the restriction, instead of letting it suffocate me and bring me down. Now 10 months later, I realize that this concept applies to life as well. When I stop fighting change or difficult circumstances and instead, welcome them as just part of life, something almost magical happens. It is like I am free to be, to grow, to adapt, and to create. Even in the midst of seeming chaos, I can find joy and peace.
The take-home here is, stop fighting for a linear life pattern, instead embrace the zig zag pattern and you will go places you never even dreamed of.
Like today, I found out I was featured in another roundup post. This time Eileen and Phoenix Helix shared the top 100 recipes as shared in her AIP Roundup posts. My Pumpkin Pie Cupcakes were highlighted for week 91. You can see her post here.
I also wanted to share that my Carob Chip Bars (made with plantains) are featured on Primal Palate’s 35 Christmas Cookie Christmas Roundup. (See their post here) I have been following Bill and Hayley for years so imagine my surprise when they highlighted one of my recipes! I feel very blessed.
