I don’t know about you but September rolls around and things start to get really busy…and cold again. The brisk mornings and evenings mean I always look for comfort foods. I start batch cooking again just for ease. So here is a great recipe that is good for all, a tasty and useful chicken recipe that everyone will love! Plus with the added benefits of turmeric, ginger and the umami-type flavour, your taste buds will thank you.
Notes: I buy the Costco sized thighs – so that exactly doubles this recipe. Then in a large plastic bag I cover the chicken in all the ingredients and marinate it. Throw it in the freezer until you are ready to use it. Defrost and slow cook. Voila! Super moist, pull apart chicken.
- 2 lbs boneless, skinless chicken thighs
- 2 tbsp fish sauce
- ¼ c apple cider vinegar
- 2 tbsp avocado oil
- 2tbsp coconut aminos
- ½ tsp sea salt
- 1 tsp turmeric
- 1 tsp ginger
- place thighs in bottom of crockpot.
- cover with ingredients
- mix up thoroughly
- set to 4 hours on high
- Shred chicken with a fork.
- Serve however you would like. great rolled up, over cauli-rice or with plantains like I love!
